We present a simplified take on a drink from a new drinks list. It's a batch premix which is bursting with essence associated with holiday season, rendering it excellent for hosting a celebration. Reserve the remaining cordial you can use for brunch beverages, sweets, or for more rounds of the drink.
The Bikini Cocktail
Yields 10 guests
For the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Place every items into a pot, heat until it reaches a gentle boil, mixing to dissolve. Next, take off the burner and let it to cool down completely. Pour into an sealable bottle, cap it and refrigerate it in the refrigerator, where it will keep for around one month.
Preparing the Batch Mix: Combine every spirits and syrup in a big jug, let it rest for one hour, then strain preferably using muslin, making it perfectly clear.
To serve: Add 85ml of your premix into a stirring glass containing ice, gently stirring carefully for a minute until cold. Filter into a frosted cocktail glass or a similar vessel, top with a few cranberries and finish with a quick spritz of the essential oil over the top.
